White spring truffle (Tuber borchii): This truffle grows between February and April, in Italian we call this truffle “bianchetto” which means “small white”, because the average size of this truffle in this region is relatively small. It is very rare that the size is bigger than a walnut. Smell and taste are very intense and unique - it reminds a bit of garlic. Due to the wonderful taste, the white spring truffle is good to make any kind of dish - my favorite one: Truffle risotto with wild asparagus!
